So, we had a nice weekend celebrating our February Birthday Boys. The Dells was ridiculously crowded, but that's what happens when the Midwest has been in the icy grip of the Polar Vortex for so long. People need to move their bodies and feel some energy and warmth.
Happy to be entering another liturgical season, even if it's a penitential one. Lent always means Spring is not far off and this year...well, see the previous paragraph.
On Tuesday, I have to go to the scariest courthouse in the world and ask to be excused from Grand Jury Service. Yep. Not regular jury duty; I was summoned via certified mail to serve on a Grand Jury. When I spoke to the jury service coordinator and asked her how I was chosen, she said, "just pure luck!". Yes, luck. That kind of luck has been dogging my heels all winter long. Hmmmm. She also told me that, if I speak to the "very understanding" state's attorney there, I will "certainly" be excused from serving, due to my excellent "excuse" of being the sole caretaker for 7 kids. I'm still very nervous and worried, so could y'all say a prayer for me on Tuesday? I'll say one for you, too!
Back in the fall, we discovered that Joe is allergic to gluten. So, we've been traveling the fun road of helping a picky 15 year old eat gluten free while still trying to feed the rest of us. With Lent upon us, I'm looking for some new meatless, gluten-free recipes that Joe will actually eat. Basically, Joe loves meat and dairy and despises fish and ALL veggies (except for corn and potatoes.). My meatless, GF repertoire includes:
- GF Mac n Cheese (from scratch)
- GF cheese lasagna
- GF pasta marinara
- crustless cheese pizza (we've not had
good luck with the GF crusts)
- some meatless soups
- cheesy rice
So, help a mama out!

DeleteSoups: lentil, Italian white bean, potato leek. Vegetarian stir fry. Corn chowder? Quiche? He needs to like SOME vegetables, any?
ReplyDeleteI kid you not: he does not like ANY. To his credit, he does try and retry all of them periodically, but really can't stand them. He will eat onions and green peppers in pizza or omelets, though! Any good corn chowder recipes? That sounds delish!
DeleteWe have really been liking variations on spanish rice or beans and rice recipes for Friday dinners, also fritatta (basically a crustless quiche) is good and I always put well cooked chopped spinach in it and everyone still gobbles it up. You could try quinoa as well, my family likes it and it has more protein than rice but it is a little too pricey to eat all the time.
ReplyDeleteOk, that's a good idea on the frittata! I made it a while back, and everyone loved it. I've snuck spinach into chicken gnocchi soup (back when he ate gluten) and he didn't notice, so that's a great reminder! Thank you!
ReplyDeleteWe have had a lot of success with the bob's red mill gluten free pizza mix. You just add a few things to it and it really is yummy!
ReplyDeleteLove us GF bread for PB&J - I guess that's a given, but we really enjoy it for an easy and meatless meal; apple slices on the side! (or any fruit!)
I've seen Bob's but haven't tried it yet. Sounds like it's time!
DeleteHe eats PB and J nearly every day for lunch (Udi's bread is pretty good!) or PB and apple slices. PB has always been his favorite. I'm trying to talk him into more grilled cheese sandwiches, though.
I recently read an article about the health benefits of whiskey. It is meat less so perfect for Lent. Might have gluten though. Not sure. Anyhow, check it out. Might just be a French-Canadien thing...
ReplyDeleteCheck out recipes and cookbooks by Cybele Pascal. She cooks with the top 8 allergies free including gluten. The nice part is if you want to keep in milk or dairy instead of using rice milk or dairy free alternative you can. I have a lot of food allergies and her recipes are great. I don't consider myself to be a amazing cook but people can't tell her stuff is gluten free with those recipes.
